Instants and sorceries with escape can work pretty well in decks that involve storm or similar effects, where casting your spells an extra time or two could make a huge difference by the end of a long combo turn
Not only does it tutor exactly what you need, but you also get to give an opponent a card too, that you can mill before they get a chance to draw it

"This Mount" is "this Mount." The verb "become" is "become," so: "This Mount becomes saddled" means "this Mount becomes saddled." Since it says "until end of turn," it is "until end of turn." "As a sorcery" is "as a sorcery" (covered in #20), so: "Saddle only as a sorcery" is "saddle only as a sorcery." To put it simply, it means "saddle can only be activated at sorcery speed." In summary, "Tap any number of other creatures you control with total power 3 or more: This Mount becomes saddled until end of turn
